A/DSC 麵團黏性測定裝置
主要用於測定麵團的黏性(Stickiness),利用每次擠壓出少量的麵團,可重複多次測定麵團的黏著性(Adhesiveness),適用於麻糬等具黏彈性(Viscoelastic)的樣品測試。
The small dough piece is held in a chamber with a piston to enable the extrusion of multiple fresh sample testing surfaces. The accuracy of the stickiness result is ensured by using a lapped finish cylinder probe, which has a uniform adherence surface, to make the measurement. Examples of research to date include the investigation of dough stickiness due to overmixing, addition of excess water, overactivity of proteolytic enzymes, difference in wheat varieties and composition.
